Pork Carnitas
Ingredients:
3 lbs. boneless pork loin, cut into 1-inch pieces
3 large garlic cloves, minced
1–2 jalapeños, minced
1 tsp cumin
1 tsp sea salt
1/2 tsp pepper
2 TB olive oil
1/2 cup fresh orange juice
1/4 cup fresh lime juice
1 cup chicken stock
Preparation:
Season pork with cumin, salt, and pepper and brown in olive oil. Transfer to crock pot and add orange juice, lime juice, jalapeno, garlic, and chicken stock. Cook for 6-8 hours.
Allow pork to cool and absorb the remaining juices. Shred meat with a fork.
I usually make soft tacos with refried beans, pork, pico de gallo, lettuce, cheese, cilantro, and a squirt of fresh lime. Delicious!
