Roasted Tomato Sauce
This sauce is very easy. I originally saw the recipe on Bravetart.com, and loved it.
Roasted Tomato Sauce
3 lbs. Roma tomatoes, slice in half lengthwise
1 red bell pepper, sliced in half lengthwise and seeded
1 white onion, peeled and cut into large chunks
6 cloves garlic, peeled
Olive oil
Salt and pepper
Place all ingredients on a large sheet pan. I cover mine in foil for easier clean-up. Salt and pepper the veggies. Drizzle olive oil over the veggies. Roast at 425 for 1 hour. After it is done cooking, place ingredients in food processor and pulse until you have a nice sauce.
