Salad Days

This meal was all about:

...Roadside vegetable stands
...It's too hot to cook!
...Refreshing and light
...Healthy eating

The best part about this meal is that it can be adapted to whatever you like or have on hand. This is what I used.
  • Italian lettuce blend
  • Grilled chicken
  • Tomatoes
  • Carrots
  • Cucumber
  • Egg
  • Red Onion
  • Avocado
Hmmm, you know, some bacon would be really good on this salad. Yes, bacon makes everything better.

Oven Baked Chicken Tenders

Oven Baked Chicken Tenders

Adapted from


1/4 cup all-purpose flour                        
1 egg                        
tablespoon water                        
1 cup plain or Italian style panko crispy bread crumbs (I used regular Italian bread crumbs, and it was still just as delicious.)                        
1/2 cup grated Parmesan cheese                        
1 package (about 1 1/4 lb) chicken breast tenders
2 tablespoons melted butter


Heat oven to 425°F. Line cookie sheet with foil; spray with cooking spray. In shallow dish, place flour. In another shallow dish, beat egg and water. In third shallow dish, mix bread crumbs and cheese. Coat chicken with flour; dip into egg mixture, then coat with bread crumb mixture. Place on cookie sheet. Bake 15 to 20 minutes, turning once, until chicken is no longer pink in center and coating is golden brown. I drizzled the chicken with butter for a crispier crust halfway through cooking time. Serve with dipping sauce if you prefer.

Vintage Fiesta by Homer Laughlin China

Homer Laughlin China Company makes Fiesta. They are an American company making quality dinnerware. These were the original colors that came out beginning in the 30s. These colors are no longer made and must be found on the secondary market, but HLC does make many new colors of Fiesta. The tablecloth is a Bob Van Allen tablecloth with matching napkins. Enjoy!
