Cold Weather Soup!

The weather has taken quite a turn in Kansas. We went from a record high of 74 degrees to below freezing weather with accompanying snow in 24 hours. Welcome to Kansas. The old saying goes, "If you don't like the weather in Kansas, just wait five minutes, and it will change."



Cheesy Corn and Potato Chowder

½ tablespoon butter
2 c. water
2 c. peeled, chopped potatoes (3-4 potatoes, depending on their size)
1/2 c. chopped carrots
1/4 c. chopped white onion
1 1/2 t. salt
1/4 t. pepper

Sauté onion and carrots in butter for about 5 minutes to soften them. Add other ingredients. Cook until tender then set aside.

While potatoes are cooking, cut 6 slices of bacon in small pieces and cook until crisp.
Set aside. (This step is optional. The soup will be delicious without the bacon—I just really like bacon.)

1/4 c. melted butter
1/4 c. flour
2 c. milk
1 16 oz. package of sharp cheddar cheese,
1 can corn, drained

In large soup pot melt butter, and then add flour. Cook a minute or two. Add milk and stir until smooth and thickened. Add cheese, corn, bacon and cooked veggies with cooking water. Cook until heated through.
