Snowed in with really awesome food!

Chicken, Vegetable, and Rice Casserole

2 Tablespoons butter
2 Tablespoons olive oil
½ cup onions, diced
2 cups carrots, diced
1 cup peas
1 teaspoon thyme, dried
1 teaspoon parsley, dried
1 teaspoon garlic powder
½ teaspoon black pepper
2 cups cooked chicken
2 cups cooked rice
1 10.5 oz. can cream of chicken soup
1 10.5 oz. can cream of mushroom soup
1 cup chicken broth
1 cup milk
1 cup shredded cheese, cheddar or mozzarella
1 cup bread crumbs or 2-3 slices food processed into crumbs

Sauté onions and carrots in butter and olive oil for 5 minutes. Add chicken broth and spices; cook an additional 5 minutes. Add soups and milk. Cook until heated through. Add peas, rice, cheese and chicken and cook until cheese melts.  Pour into a 9 x 12 casserole and top with bread crumbs. Cook at 350 degrees for 30 minutes.
