Winter is a time for soup!

Beef Stew
2 lbs. beef stew meat
2 tablespoons flour
2 tablespoons olive oil
2 cups tomato juice
3 carrots, peeled and sliced
5 potatoes, peeled and diced
1 can green beans
1 can whole kernel corn
1 can peas
1 teaspoon dried thyme
2 cups water

Heat olive oil over medium high heat. Dredge meat in flour. Brown meat. Add water and tomato juice. Add carrots, salt, pepper, and thyme. Bring to a boil and simmer over medium heat for 1-2 hours. Add potatoes and cook for another 45 min. Add corn, peas, and green beans. Simmer for 10 min. Serve with crackers or cornbread.
