31 Days in the Kitchen--Day 28

Homemade Chicken Soup

1 small bag carrots, diced
3 ribs celery, diced
1 medium onion, diced
1 whole chicken, cut up
1 teaspoon thyme
1 teaspoon rosemary, chopped
1 teaspoon oregano
1 teaspoon basil
2 bay leaves
1 clove garlic, minced
1 teaspoon black pepper, or more to taste
1 teaspoon salt, or to taste
1 tablespoon olive oil
1 cup long grain rice

Saute the vegetables and spices in the olive oil. Add chicken pieces and fill soup pot with water (at least 3/4 full of water). Bring to a boil and then simmer covered for an hour. Remove chicken and debone. Add rice to soup pan. Dice chicken and place back in pan. Cover and simmer for 30 minutes. Taste and adjust seasonings. Serve with cornbread.
